Strong Saturday- hiking!

I'm loving this November weather. In NorCal it's still getting up to the 70s! It cools off at night, but during the day it is perfect for getting outdoors. Today some friends and I went hiking. I snapped this picture, because I really couldn't help myself.



I truly hope that when my hair is grey and in my older age, my husband will still be walking trails with me holding my hand. They were just too precious. 

This week try something new... Hiking, snowboarding, running inside the gym, lifting (if that's not usually your thing). Just be active!

I love this stuff! At first, I didn't think it would make much of a difference, but oh my goodness. I had crazy amounts of energy & felt like I could go forever on my workout! Catalyst is full of branched chain amino acids which provides energy during your workout so you use those instead of burning muscle or getting fatigued during your workout.  I'm always working out at my max heart rate (which I don't like, because it's that crazy heart-beating-out-of-your-chest feeling), but with Catalyst, my heart rate was 20 bpm lower.  I was able to push a lot harder.  This takes second place behind the delicious Mango Strawberry Spark for my favorite AdvoCare product! One more thing... It says it has 30 servings. I only took one capsule in the morning before my workout.  This little bottle of goodness is going to last me 90 days.

You Brighten My Day Care Package

"Sending you a little box of sunshine to brighten your day as you always brighten mine!" I love this quote.  I sent this care package to my man recently to remind him of sunny, warmer days (he's been chilly lately).  I picked mostly yellow/brightly colored things, starting with vitamin C (his request), Lay's Stax, M&Ms, Fruit Gushers, Crystal Light, headphones, Swiss cake rolls, Fiber One bars, and lots of warm thermal clothing!  

I also made some handmade cards.  Too bad I didn't take a picture.  Here are some links to my Pinterest where I got the ideas for the cards.  One card said "Happiness is like peeing your pants.  Everyone can see it, but only  YOU can feel it's warmth."  Thought that would make him smile! {Pinterest link to the "happiness" card}.  I also sent a card that said "I just plane love you." Inspired by {this cute card}.  Pretty sure he will get a kick out of it!

My Go-To Dinner-- Vegetable Penne Pasta!

A lot of people may think being a vegetarian limits your food choices, but it has really stretched my creativity. This is my go-to dinner, when I want a ton of flavor & I'm hungry!  The meatless crumbles even provide the perfect amount of protein.

You'll need:
1/2 bag of meatless crumbles (optional- I use Morning Star brand)
1/2 box whole wheat penne
 1 green bell pepper
1/2 onion, white
1 clove garlic
olive oil
1 cup frozen corn
2 cups spinach
salt
1/3 bunch cilantro
1/2 tsp oregano
3/4 jar pasta sauce (I like the low sodium versions)
shredded cheese (for topping)

  1. Get out all your ingredients. This recipe has several & you don't want to be missing anything.
  2. Start cooking pasta according to box directions.
  3. While cooking pasta, heat up a Tbsp of olive oil in a sauce pan over medium heat.
  4. Warm up your frozen meatless crumbles, while you're chopping the pepper, onion, & garlic.
  5. Then, saute pepper, onion, garlic in sauce pan about 8 mins.
  6. When warm, add corn & spinach.
  7. Chop cilantro. After spinach has wilted, add cilantro, oregano, and pasta sauce.
  8. Serve and top with cheese.
